Glory’s 3rd Birthday is coming up this Thursday so we searched the net to find a muffin recipe to make her some tasty treats for her Birthday. I came across a pumpkin muffin by Bunny Roo Beagle.

Hey Glory it’s your 3rd Bday coming up, what do you want mom to make you for a tasty treat?

I would like to try the pumpkin bunny muffins.

First you get your oven going at 350.

You then get your ingredients ready.

You mix all the ingredients together.

If your lucky enough you get to taste test the batter.

Using a melon baller put the mixture into cupcake molds.

Take a taste test before they go into the oven.

nom, nom, nom

Bake at 375 for 25 mins.

A double batch.

Here is her recipe:
Pumpkin Bunny Muffins
2 ½ Cups of Unbleached white flour
1/4 Cup of Vegetable oil
1 tsp Vanilla extract
1 tsp Baking soda
1 tsp Baking powder
3/4 Cup of All natural applesauce
1 Egg
1 Cup of Solid-pack pumpkin
1/4 Cup of Honey
In a large bowl, mix all ingredients until well blended. Spoon batter into muffin cups. Bake at 375 degrees for 25 minutes. Cool completely before serving. Store in an air-tight container. After three or four days, freeze remaining muffins. Enjoy!

Okay, I’m a bit disappointed as the title is misleading. I was expecting muffins with bunny in them…now that would have been something pawsome! These might be good too, I first have to get my mind off of wabbits 😉
